Instructions

1. saute block one until tender and fragrant - about 15 minutes. scrape frequently and add a little water if needed to prevent scorching
2. Add spices and salt. Continue to stir and heat 5 minutes
3. deglaze the pot with coconut milk
4. add the veg broth and other ingredients from block 4. Bring to a simmer and allow to bubble lightly for 30-45 minutes. Keep checking the bottom of the pot with a flat scraper; the red lentils tend to sink and scorch.
5. Stir in the chopped fresh spinach.
