Instructions

1. preheat oven to 400. line muffin tins with paper liners
2. combine soy milk and acv. set aside
3. mix block 2 in a bowl and whisk
4. pour block 3 and soy milk mixture into flour mixture. don't over mix. some lumps are ok. fold in the blueberries.
5. scoop out dough with a scooper. 2/3 c batter per muffin. top w some blueberries. sprinkle w coarse sugar
6. Bake 28 minutes until golden and knife comes clean
