1. Preheat oven to 350, line baking sheets with parchment
1. mix flax & water and set aside
1. Whisk together dry ingredients - flour through salt
1. mix together wet ingredients - flax egg plus sugar through vanilla
1. Scoop into 35g balls and roll then coat in cane sugar first, then powdered sugar. If its difficult to work with, dough can be refrigerated for an hour before rolling
1. Place on sheet 2 inches apart and bake 10 minutes. Let them set for a little bit on the baking sheet before removing
