1. Cut sweet potatoes lengthwise and roast in 450 oven 30 minutes. Remove skins once cool and dice into small squares
1. Saute onions in pan over medium heat until soft & golden. Add sugar and vinegar until carmelized and liquid is mostly cooked off
1. Add chorizo and seasonings to onions, mixing evenly
1. in a bowl fold together sweet potatoes and chorizo onion mixture
1. Roll out puff pastry 1/16" thick and cut out 5 large rounds. Place .25 cup filling on each round, fold over and seal with plant milk. crimp edges w fork
1. 400 oven. Sprinkle w flaky salt. Bake 17 minutes
