1. Preheat oven to 350. Press moisture from tofu and shred.

1. Combine tofu with tamari through salt, spread on baking sheet and bake 30 minutes, moving around once halfway through cooking time

1. Saute onion & garlic until tender, then stir in cumin through tomato paste and continue to saute 3 more minutes

1. Add lime juice and tamari then fold tofu into the onion mixture in the pan
