Instructions

1. soak chickpeas for 24 hours and pat dry
1. pulse chickpeas & remaining ingredients (excluding olive oil) in a food processor (not pureed)
1. lightly pack into 40g falafel balls. Don’t weight each falafel; Portion falafels by volume
1. lightly brush falafels with olive oil
1. bake at 400 for 13 minutes, flip & brush second side lightly with olive oil then bake 12 minutes more. Total baking time 25 minutes
