combine flax and water set aside

Peel apples and dice into small cubes

combine dry mix ingredients and whisk thoroughly

mix together wet ingredients, including flax egg, and stir into dry mix. do not overmix. fold in apples. use large white scoop to fill muffin papers.

combine streusel ingredients and top each muffin with 2 tablespoons of mixture. bake at 425 for 5 minutes then reduce heat to 350 and bake for 15 minutes more. allow to sit at least 10 minutes to set
