Heat both sides of pita on griddle on high heat. About 30s per side. Err on heating longer.

While pita is heating sautée gyro soy curls

Once pita bread is heated, add each ingredient from block 3 down the middle of the pita bread. Use red 0.25 cup portion spoons

Make it a bowl: Serve on 1 cups sliced romaine. Toast the pita, cut into triangles & arrange around the sides
