Preheat the oven to 350 and spray an 11 x 17 sheet pan with avocado or canola spray. To fill the pan properly please make sure you're making a recipe for 12 pieces of cake

Mix coconut milk with apple cider vinegar and mix then aside for 10 minutes

Combine flour through salt and whisk thoroughly

To the dry ingredients, add the milk/ACV mixture, oil, applesauce and vanilla. Mix thoroughly with a whisk until smooth then add the boiling water and mix through again.

Pour the batter into the pan & bake 20 minutes. Prepare frosting as the cake is baking.

To prepare frosting melt the butter, cocoa, coconut milk and vanilla in a pot, whisking all the time. When it comes to simmer, remove from heat and whisk in the powdered sugar gradually. Pour the warm frosting over the warm cake, spreading evenly. Sprinkle w colored sugar
